Haggis (for Burns Night)
This post is just about the haggis. For more instructions on how to host a Burns Night, click here.
Step 1: Go to a butcher and buy a fresh haggis. Smuggle it from Scotland to England (or the boring alternative: obtain one from a supermarket. Recommend Macsweens).
Step 2: Rub the casing with a bit of whisky and cover it tightly with a large amount of aluminium foil.
Step 3: Place it in a very shallow bath of water and a dash of whisky on a baking tray and bake at 150 Celsius for 2 hours.
Step 4: Unwrap and place on a plate. Recite Burns’ immortal ‘Address to a haggis’ and cut it open at the right moment (‘His knife see rustic Labour dight / An’ cut you up wi’ ready sleight’)
Serve with neeps, tatties and general good cheer (remaining recipes here).
