Simple savoury French toast

Ah, French toast. So easy to cook, so many varieties. Personally, I have always favoured the savoury over the sweet, as that is what I grew up with and so adding sugar, cinnamon, syrup, honey, vanilla or anything of the sort seems just plain wrong.

I love French toast because it can be eaten at any time of the day. Normally I eat it for breakfast, but there are times when I am home alone for dinner and it’s the only thing I have the energy to cook. Today, it was actually a mid-afternoon snack, as I had an early lunch and am invited to a late dinner. Multi-functionality…. it always wins in my book!

These measurements serve two people as a light snack (1.5 toasts each). Adjust based on your appetite!

  • 3 slices white toast (you can use brown, but white tastes better)
  • 2 eggs
  • A dash of milk (amounts to about 4-5 tbsp)
  • Pinch of salt
  • Pinch of black pepper
  • Less than a pinch of chili powder
  • Vegetable oil

Beat eggs with milk, salt, pepper and chili powder.

Cut toasts into half (triangles always taste better than squares).

Heat oil in a frying pan (more is better). Dip toast into the egg mixture until covered and then place in the pan. Fry on high heat, flipping occasionally until browned (longer if you like it crispy!). Cover a plate with kitchen paper and put the fried pieces on it to soak up the excess oil. Then, DIG IN!
